Luxurious New Year’s Snack with Bleak Roe

Our head chef has shared one of his best recipes for a New Year’s snack – Petit Choux with Bleak Roe, and our bartenders have revealed the recipe for this year’s New Year’s cocktail. Follow the recipes and bring the Riverton feeling to your home!

Petit choux with bleak roe

Petit choux – Kalix bleak roe – crème fraîche – pickled onion – dill

Ingredients:
62 g water, 62 g milk, 50 g butter, 1/2 pinch of salt, 1/2 pinch of sugar, 75 g all-purpose flour, 2 large eggs

Craquelin:
25 g butter (room temperature), 25 g brown sugar, 25 g all-purpose flour, 25 g finely chopped dill

1. Prepare the Craquelin:

  • Mix the butter, brown sugar, dill, and flour in a bowl.
  • Knead the ingredients into a smooth dough.
  • Place the dough between two sheets of parchment paper and roll it out into a thin sheet (about 2 mm thick).
  • Freeze for at least 20 minutes or until very cold.
  • Use a round cutter to stamp out small discs, slightly larger than your choux buns, and place them on a parchment-lined tray.

2. Prepare the Choux Pastry:

  • Preheat the oven to 200°C (top and bottom heat).
  • In a saucepan, bring water, milk, butter, salt, and sugar to a boil.
  • Once the butter has melted and the mixture is boiling, remove the pan from the heat and quickly stir in the flour all at once. Stir until you have a firm dough that pulls away from the sides of the pan.
  • Return the pan to the heat and stir the dough for 1–2 minutes to dry it slightly.
  • Remove the pan from the heat and let the dough cool for a few minutes.
  • Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
  • The dough should be smooth and slightly thick, yet hold its shape when piped.

3. Shape and Bake the Choux:

  • Line a baking tray with parchment paper.
  • Pipe small rounds of choux pastry (about 4–5 cm in diameter).
  • Place a craquelin disc on top of each choux bun.
  • Bake in the oven for 25–30 minutes, or until golden and puffed. Do not open the oven during the first 20 minutes to avoid collapsing.

4. Pickled Onion & Whipped Crème Fraîche:

  • Peel 3 red onions and slice them thinly using a mandoline or knife. Bring a pickling liquid to a boil using 1 part vinegar, 2 parts water, and 2 parts sugar. Add the sliced onions to the boiling liquid and let cool.
  • For the whipped crème fraîche, place 1 dl (100 ml) crème fraîche in a bowl and whisk with a balloon whisk or electric mixer until fluffy. Grate in some lemon zest and season with a pinch of salt.

5. Fill and Serve:

  • Once the choux buns have cooled completely, use a serrated knife to cut them in half.
  • Fill each choux bun with 10 grams of vendace roe, whipped crème fraîche, and pickled onion.
  • Serve and enjoy!

Riverton's New Year's Cocktail - Something Glamorous

Our bartenders are sharing the recipe for this year’s New Year’s cocktail – you’re warmly welcome to try it!

Ingredients:
1.5 cl elderflower liqueur, 1.5 cl RinQuinQuin, 1 cl Amaro Montenegro, and 2 cl Jasmine Cordial.

Top with sparkling wine and orange foam.

Ingredients for Orange Foam:
105 ml orange juice, 45 ml syrup, 15 ml lime juice, 15 ml Campari, 120 ml filtered water, 1.8 g methylcellulose, and 0.5 g xanthan gum.

Instructions:
Combine the mixture for 10 seconds to allow the acids to dissolve. Pour into a siphon and charge with 2 cream charges. Place in the refrigerator for at least 30 minutes before use to allow it to set.
